Easy Tofu Handrolls

I finally have more recipes for you! After my daughter was born, it just became way too hard to come up with recipes, test them, and then find the time to photograph, write, and post them.

Well, a few things happened to finally change that. First, both my kids are a little older and a little more independent. Second, I am letting go of aiming for “perfect” and instead settling for “done”. I really love to cook and share my recipes, so I’m excited to get back into it. Even if it means my photos will be quick snaps on my phone and the recipes a bit more basic.

My first recipe as I jump back into things, is my kids favorite lunch: Easy Tofu Handrolls

You can totally substitute the fillings to match your tastes or what you have on hand. This is just what we usually stick to for fillings because they are quite classic when it comes to vegetarian sushi.

Before I go on to the recipe, I want to emphasize that I am not Japanese and these are by no means traditional handrolls or sushi. These are just my version of a food that my family and I really love.

Easy Tofu Handrolls

Ingredients:

  • 1 cup sushi rice or short grain white rice
  • 1 Tbsp maple syrup or sugar
  • 2-4 Tbsp rice vinegar
  • A few packages of snacking seaweed
  • Avocado, sliced
  • Carrot, sliced into matchsticks
  • Cucumber, sliced into matchsticks
  • Extra firm tofu
  • Tamari or soy sauce
  • Toasted sesame oil
  • Avocado or other vegetable oil

Directions:

  1. Prepare the rice. Combine well rinsed rice with 1.5 cups of water in a small pot. Bring to a boil, reduce heat and cover until all water is absorbed. Let cool
  2. Prepare the tofu. Slice the tofu into strips and marinate in a few tablespoons of soy sauce with a drizzle of sesame oil. Heat the oil in a pan over medium high heat. Add the tofu and cook on both sides until golden. Set aside to cool.
  3. Prepare the vegetables and arrange on a platter.
  4. Mix the rice vinegar and maple syrup into the rice.
  5. Now it’s time to eat! Take a sheet of seaweed and fill it with a little rice and the fillings of your choice. Dip in soy sauce and enjoy!
